Ever since I started here at Emory and Henry, quesadillas have been life-changing for me. They are quick, filling, and there are several different ingredients that can be put in them. The cheese quesadilla is my favorite menu item from Stingers. If you have not had one, I highly suggest trying one out. However, Stingers is not always open, so I came up with my own method to make quesadillas that are just as good. This recipe has simple ingredients, but turns out to be a great meal. If you can not make a trip to the grocery store for your chicken and cheese, try getting these ingredients from the salad bar in the Van Dyke dining hall to save for later.

Ingredients
2 tortillas
½ cup of precooked chicken strips
⅓ cup of shredded cheese
1 tablespoon of taco seasoning

Instructions
To make the tortillas crispy, place each tortilla in between two paper towels. Then microwave each tortilla for 30 seconds. Flip the tortilla and microwave for another 30 seconds.

Mix the chicken with the taco seasoning and microwave for 1 minute.

Cover one tortilla with cheese, then spread the chicken over the cheese. Add another layer of cheese on top of the chicken, then top with the second tortilla.

Cook for 1 minute in the microwave.
